I can’t believe it’s already time for another What’s Up Wednesday…this month has just gone by so fast! Well, I’m linking up again with Shay from Mix Match Mama for What’s Up Wednesday!
What We’re Eating This Week:
Monday – Tyson’s Tastemakers Meal – Lemon Parmesan Chicken
Tuesday –Robert has a work dinner to attend and it’s ballet night, so I’ll just piece something together for the girls and I.
Wednesday – What a kwinky-dink…I posted about this last month, but we are loving the One Pot Beefy Broccoli Rice. It’s become a family favorite. Emmalyn has even asked me to make the supper that has the trees in it. :o)
Thursday – Probably leftovers from Wednesday night.
Friday – Probably take-out from somewhere
What I’m Reminiscing About: Last week I went to UALR in Little Rock with some of my co-workers for an Ethics CPE conference. The speaker was the former CFO of Enron. Even though he was interesting, it was crazy because one of my accounting professors from Union was there. Apparently he is teaching at UALR this year (just for a change) and he is planning on retiring next year. What are the odds that I would run into someone from Union at an hour-long presentation on a random weekday at a place over 4 hours away from Union? It’s been over ten years since I’ve seen someone from college (other than my best friend from there). Anyways…with that being said, it’s made me start reminiscing about college days and wondering how different classmates I had are doing and what they are up to these days.
What I’m Loving: Drinking green juice every morning. I know green smoothies are supposed to be good for you, but at this time in my life I just don’t have time to make them every morning and get out of the house on time for daycare drop-off and to get to work on time. So I saw that there is green juice and I thought well maybe that would be about the same as a green smoothie and it would be more easily accessible for me to grab in the mornings.
I buy a box of 6 bottles of Suja Green Juice at Sam’s Club and have been having one pretty much every morning for the past month and I really think it has made a little bit of a difference in my health and craving more healthier foods. I like this brand because after a little research it seems to have less sugar than a lot of other brands. I admit it took me awhile to get used to the taste of it, but now I crave one every morning before I have my coffee.
What We’ve Been Up To: We traded in our 4-wheeler and bought a 4 seater side-by-side and so pretty much every day since we’ve gotten it, the girls beg to go for a ride around the yard. They both love it and I’m excited to go take them out on a trail somewhere soon!
What I’m Dreading: I’m not looking forward to having to take Claire to get her 2 year old shots here in a couple of weeks.
What I’m Working On: My attitude and my relationship with Christ.
What I’m Excited About: A lot is happening in the next month…Our Anniversary, Claire’s 2nd Birthday, Emmalyn’s first ballet recital, my new niece being born, Emmalyn’s Kindergarten Open House, and going to LA for a work conference. It’s going to be a fun and busy time here for the next few weeks!
What I’m Watching/Reading:
- Watching: I got caught up on the show “Younger”. It’s definitely one of my “splurge” shows. It’s definitely not a Dr. Quinn, Medicine Women, Little House on the Prairie, or Touched by an Angel type of show, but I really like Sutton Foster and Hilary Duff in it and it’s just a show that you can turn on and listen to in the background while you are doing something else. The episodes are short and it’s just a fun show to use to escape life for a bit.
- Reading: I have been reading a lot this month and for the most part I’ve enjoyed a lot of what I’ve read. I have three books in progress that I am hoping to finish by the end of the month. Check out this post to see what I read in March!
What I’m Listening To: I’ve really enjoyed listening to the “Knowing Faith” podcast by The Village Church. I really like Jen Wilkin (her book “Women in the Word” is so good) and have enjoyed listening to her and her co-hosts talk about different things related to faith. It has made me want to dive deeper into studying the Bible on my own and see what I discover in regards to my faith and beliefs.
What I’m Wearing: Starting to pull out my Spring clothes for the warmer temperatures that are slowly but surely starting to make an appearance.
What I’m Doing This Weekend: I am headed down to the Little Rock area to attend my “sister’s” (she is my sister’s (Amanda) best friend from college and will be her future sister-in-law and I’ve taken her on as my other younger “sister”) wedding. My dad is going down with me and we’ll stay with Amanda Saturday night after the wedding and then head back home on Sunday morning. Just a short/quick trip, but I’m looking forward to it!
What I’m Looking Forward to Next Month: A lot of things as mentioned above…Our Anniversary, Claire’s 2nd Birthday, Emmalyn’s first ballet recital, my new niece being born, and going to LA for a work conference. It’s going to be a fun-filled month!
What Else is New: Nothing much…just enjoying that Spring has finally come around! However, I’m not enjoying the pollen that is accompanying it. Hoping we will get a good rain soon and that will help to get rid of some it.
