Today I am linking up with Shay at “Mix and Match Mama” with the What’s Up Wednesday link-up. This is one of my favorite posts I do every month. I think it will be fun to go back and look through these and see what was going on in life during this past year.
What We’re Eating This Week: This is something we ate this month (not this week), but it was so yummy, I just wanted to share. There is a cute little kitchen store here in NWA called Euna Mae’s. The owner Amy Hannon is such a delight and I love her story and her message of “Love, Welcome, Serve” that she wants to share with everyone (follow her on Instagram @eunamaes. She recently published a cookbook (Love, Welcome, Serve) with so many tasty recipes that I can’t wait to try out. Anyways, she also has a blog and sometimes shares recipes on it as well. The beginning of this month was stressful on different aspects and I wanted a good, comfort meal to eat. She has a recipe for Chicken Poppyseed Casserole that I’ve been wanting to try and I thought this was a good time to try it out and it did not disappoint. It was delicious!!!
What I’m Reminiscing About:
A couple of weekends ago my sister and I had a Sister Weekend and we went to Tulsa and stayed two nights and got to shop and shop!!! We had such a good time. We haven’t had just sister time in years and it was so rejuvenating and refreshing for us both. I can truly say that my sister is my best friend and I love getting to spend time with her (especially now since we are older and it’s fewer and farther between times that we see each other).
What I’m Loving: Some girls at work walk everyday at lunch and when the weather is nice I have been joining them. We work right next to a new walking trail so it’s been nice getting outside and getting some fresh air and exercise on my lunch hour. We walk about 2.5 miles in about 40 minutes and so it feel like we are getting a pretty good workout in as well (because we are definitely not leisurely walking). I wish I could do it everyday like they do, but literally the lunch hour is the only time I get to run errands or it’s when Robert and I have our “lunch dates”, so I just can’t right now. I am striving to at least go 2 or 3 times a week and just be satisfied with that.
What We’ve Been Up To: Just living life…nothing too exciting. Enjoying my little family!
What I’m Dreading: Well, Emmalyn had her dentist check-up appointment and she does need to have a cavity filled (and possibly a crown) and while we are at it a couple of other small cavities. We have scheduled this for next month and I am dreading it. She will have to be sedated and the dentist said she doesn’t like for parents to come back there with the kid and I totally started crying at that. I hate that she has to go through something like this at a young age and I can’t hold her hand through it. I know I won’t be able to be there and help through all the hard stuff of life, but she is still young and I want her to know that mommy is here for her. I know that she will be in good hands with the dentist (we like her a lot!) and I know the dentist wants her to have a positive experience as much as I do…so I know everything will be okay, but I am definitely not looking forward to it.
What I’m Working On: I am doing my best to begin clearing out clutter from my house. I am so sick of ALL the STUFF we have. A lot of it is baby clothes and newborn items and I am working on getting that ready to sell in a big consignment sale we have here in our area. It’s a lot of work to do and get ready for, but I am so ready to get STUFF out of the house! It’s in two weeks so we will see if I will be ready to put stuff in the sale. If not, at least what stuff I get done will be somewhat ready for the Fall sale. Hopefully I will continue to make progress on this. I want to start taking it room by room and getting rid of things. This is my goal to complete by the end of summer.
What I’m Excited About: I’m excited about Easter. I’m excited about seeing Emmalyn hunt Easter eggs and I’m excited to see the girls get their Easter baskets. But more than that…I am excited to celebrate the resurrection of Jesus Christ. It just baffles me that He took on the sin of the whole world and died so that we could be free. He didn’t have to do that, but He chose to because He loved us so much. It is amazing that He died and rose again. This story never gets old. I learn something new every time I hear this story taught. It is so amazing to me!
What I’m Watching/Reading:
- Watching: I have been watching NBC’s Timeless and am enjoying it a lot! The back story to this is that NBC canceled it after the first season, but viewers complained so much that the NBC network brought it back. That is unheard of! If a show is canceled, sometimes it will be picked up by another network (i.e. Nashville going from ABC to CMT), but never does the same network who cancels it pick it back up. So I am doing my best to support it this season so NBC will see they made a great decision in bringing it back. Such a good clean show. Check it out!

What I’m Listening To: I haven’t been listening to a lot lately. I am just feeling overwhelmed with words and pictures coming at me from ALL directions that I have cut back on listening to podcasts. I have been mainly just listening to the new episodes of five of my favorite podcasts: “What Should I Read Next”, “The Girl Next Door Podcast“, “Happy Hour with Jamie Ivey”, “The Big Boo Cast“, and “Sorta Awesome“. I have so many more podcasts that I am subscribed to and that I am looking forward to listening, but right now I just can’t take all the noise so I’ve narrowed it down to these and have been enjoying some quiet/down time in my ears this month.
What I’m Wearing: I am wanting to participate in the Putting Me Together’s Spring Challenge. I probably won’t do every day, but I have always wanted to do a capsule wardrobe and I feel like this is start. On our Sister Weekend I got to buy some new things (clothes, shoes, and jewelry) with using this information from them Challenge as guidelines. Having Amanda helping pick things out for this was so helpful and so I am looking forward to getting to wear some new outfits this upcoming month. I’m going to try to post some about the different outfits so check back here or on Instagram in the month of April.
What I’m Doing This Weekend: Celebrating Easter with family!
What I’m Looking Forward to Next Month: I am getting to go to a CPE training this coming month and it’s one I’ve been to before and have enjoyed it a lot. I like it mainly because we have training for only a half of a day and then we get to go to the horse races in Hot Springs! I’ve only gotten to go the horse races when we went for training a couple of years ago and it was so much fun and so I am really looking forward to this fun little short overnight getaway and getting to attend the horse races again!
What Else Is New: Remember how Robert was taking over as Interim Director for his department until they could decide what to do next…well, they selected him to be the permanent Director for his department. This has been a hard and stressful time trying to decide if this is something he for sure wanted to do, but we decided yes he needed to do it and so now he is the big boss of his department! I know it is very stressful for him and he has so much he has to deal with, but I am soooo very proud of him as well. He has worked really hard for this opportunity and it is so exciting to see him in this role and being a superstar at it!
